Seafood Gumbo

1 lb. raw peeled and deveined shrimp
1 lb. raw bay scallops
2 cups cooked lobster or crab or combination
4 cups chicken broth
4 cups fish stock or dashi (or use 8 cups chicken broth)
½ cup olive oil
¼ cup butter (I use dairy free)
1 cup flour
2 cups chopped onion
1 chopped green pepper
1 cup chopped celery
4 cloves minced garlic
1 package frozen cut okra
1 bottle beer
2 Tbsp. Cajun seasoning
2 tsp. thyme
2 bay leaves
 
Melt the butter and add olive oil. Add flour and combine until smooth. Slowly add the broth, stirring constantly. Add vegetables, garlic, beer and seasonings. Bring to a boil, then cover and reduce to simmer for about an hour. Add shrimp and scallops. When the shrimp are pink, add the crab and or lobster. Remove from heat, serve over rice and garnish with chopped fresh parsley.
