Healthy Cashew Chicken

The average take out cashew chicken has an average of over 630 calories and 25 grams of fat….not to mention the crazy amount of sodium and msg. My Healthy version has an average 260 calories and only about 8 grams of fat. You’re welcome!!!

½ to 3/4 lb. boneless chicken breast sliced into strips or chunks
2 tbsp. rice vinegar
1 tbsp. low sodium soy sauce
1 tsp. tapioca starch
1 tbsp. hoisin sauce
2 tsp. grated fresh ginger
2 tsp. sesame oil
1 cup red onion cut in chunks
4 cups veggies, your choice, such as carrots, broccoli, mushrooms, green beans, peppers, asparagus etc…

Chopped scallions
2 tbsp. chopped cashews

In a large skillet, heat 1 tbsp sesame oil, add chicken and sauté until done (temp 165). Remove chicken from pan, tent with foil.

In a large skillet, heat the other tbsp.sesame oil over medium-high. Add ginger and veggies and stir fry until crisp tender. Meanwhile, mix rice vinegar, soy sauce, hoisin and tapioca starch.

Add the chicken back to the pan along with sauce mixture (you can double this if you like it saucy).  Cook until everything is heated through.

Feel free to serve over quinoa or brown rice.

 Top with cashews and scallions
