Gluten Free Oatmeal Chunk Cookis

!/4 cup butter

¾ cup sugar

¾ cup brown sugar

1 rounded tsp. baking soda

2 eggs beaten

1 tsp. vanilla

1 cup natural peanut butter

3 cups rolled oats (not quick cooking)

5 milk chocolate bars, roughly chopped (I used Hershey’s)

½ cup chopped walnuts

In a large bowl, cream together butter, sugar, brown sugar and baking soda.  Beat the eggs and vanilla together and add to the bowl and mix thoroughly. Add peanut butter. Stir until well combined.  Mix in oats, then chocolate and walnuts.  Drop by heaping tablespoons or use a large melon scoop onto a cookie sheet lined with parchment paper or silicone baking mat. Flatten a little to about 1/4 inch thick. Bake at 350 for 10-12 minutes. Cool on wire racks.
