Elderberry Syrup

Elderberries have anti-inflammatory, anti-viral and decongestant properties. Elderberry syrup not only helps strengthen your immune system, but also can shorten the duration of a cold or flu. It can be taken daily as a preventative remedy. Recommended dosage: Adults 1 tablespoon up to 3 times per day, and Children 1 teaspoon up to 2 times per day. ***You should not give honey to children under 1 year old***

½ cup dried elderberries

4 cups water

¼ cup dried Echinacea

3 star anise

1 tsp. whole cloves

2 cinnamon sticks

3 tbsp. fresh ginger chopped

1 cup raw local honey

Place all ingredients in a stock pot except the honey. Bring to a boil, then lower the heat to simmer until liquid has reduced by half.  (About 35-40 minutes). Remove from heat and strain out solids. I use a fine mesh strainer lined with cheesecloth. Add honey to strained liquid and stir to combine. Transfer to sterilized glass jars. Label, date and store in your refrigerator for up to 6 weeks.
