This is a Japanese fish broth that happens to be extremely healthy. The kelp (Kombu) adds all of the benefits of sea vegetables and the Bonito flakes add protein , among other benefits.
Souper Simple Dashi
1 4×4 inch piece of kombu (organic kelp)
1/8 cup Bonito flakes
4 cups water
Put the kelp in a stock pot with the water. Bring to a boil, turn heat down and simmer 20 minutes. Add bonito flakes and continue to simmer for 5 minutes. Pour through a fine mesh strainer lined with cheesecloth.
