
Grits are actually made from white hominy. A healthier alternative to rice or pasta.
Ingredients.
1 lb. large shrimp (raw)
1 chipotle pepper, seeded and finely chopped ( you can keep the remaining peppers and sauce in a glass jar in the fridge for up to 30 days, or freeze them for even longer)
2 tbsp. sauce from peppers
½ cup chicken broth
¼ cup red onion, thinly sliced
8 oz. fresh sliced mushrooms
Juice of 1 lime
Tapioca starch for thickening
4 cups cooked grits

Mix cheese sauce with hot grits and set aside. Sauté mushrooms, onions and chipotle pepper, add chicken broth and sauce from peppers. Add shrimp, cook for 3-5 minutes or until done. Add lime juice. Thicken with corn starch and water mixture. Serve over cheddar grits.
