Peanut Chicken Lettuce Wraps


1 Lb. chicken boneless chicken breasts or thighs
Marinade
1/8 cup honey
¼ cup low sodium soy sauce
1 Tbsp. BBQ rub
2 Tbsp. minced garlic
1/3 cup pure maple syrup or agave
½ cup onion (any kind)
1 Tbsp. grated ginger
¼ tsp. cinnamon
1/8 tsp. Allspice
1/8 tsp. cayenne
Sauce
1 tsp. tapioca starch
1 tsp. water
1/8 cup peanut butter
1 ½ Tbsp. honey
1/8 tsp red pepper flakes
½ tbs. lime juice
Condiments
Large lettuce leaves (Boston, leaf, or romaine)
Thinly sliced red onion, red bell pepper, mango and carrot
Chopped peanuts and fresh basil for garnish
 
Mix all of the marinade ingredients together. Pour in to a large zip lock and add chicken. Marinate for 1-2 hours. Place all in a foil pan and grill for 20 minute at 350 ( or until internal temp reaches 175). Plate the meat and tent with foil. Put the remaining marinade in a saucepan and add the mixture of tapioca starch and water then Add the peanut butter, honey and pepper flakes. Stir on medium heat until thickened Now build your wrap !!!
