Did you know black rice is an anthocyanin, which means it’s an antioxidant, fights free radicals, is an antiviral, anti-inflammatory, and can help fight cancer!!! Definitely a Super food in my book .
2 cups cooked black rice
2 cups unsweetened non-dairy milk of choice
½ cup chopped apple (peeled and cored)
1 cup frozen blueberries
2 Medjool dates pitted and finely chopped
1 tablespoon raisins
2 teaspoons ground cinnamon
2 teaspoons vanilla extract
1 tablespoon ground chia seeds
Put all ingredients except chia seeds in a medium size saucepan. Bring to a boil, then lower heat to simmer. Cook 15 minutes. Remove from heat and add chia seeds. Stir well to combine and let sit for 5 minutes. Great for breakfast or after dinner dessert. Can be warm or cold. Serves 4
