Herb Roasted Chicken

1 4-5 lb chicken (Organic or free of hormones and antibiotics)

Sea salt and freshly ground black pepper

1 lemon cut in half

1 head of garlic

1 package each, fresh rosemary, parsley and thyme

1-2 tbsp. olive oil

Preheat oven to 400 degrees

Rinse the chicken with cool water inside and out. Season the entire cavity with salt and pepper. Place the lemon, garlic and herbs inside. Tie the legs together so it holds its shape. Season the outside with salt and pepper and rub with olive oil. Roast for about an hour and 30 minutes, but use a meat thermometer to be sure it’s at least a minimal 180 degrees. When done, cover with foil and let rest 30 minutes before serving.
