Butter Lettuce Salad with Roasted Beets

Butter lettuce salad with roasted beets, cucumbers and walnuts with a non-dairy creamy garlic Dijon Caesar dressing.

Beets are high in immune-boosting vitamin C, fiber, and essential minerals like potassium (essential for healthy nerve and muscle function) and manganese (which is good for your bones, liver, kidneys, and pancreas). Beets also contain the B vitamin folate, which helps reduce the risk of birth defects.

Dressing:
1/3 cup water
3 tablespoons lemon juice
¼ cup tahini
1 tablespoon nutritional yeast
3 roasted garlic cloves
1 teaspoons Dijon mustard
1 teaspoonRed wine vinegar
½ teaspoon dulse or kelp flakes
¼ teaspoon salt
½ teaspoon coconut aminos
Throw it all in your blender and blend until creamy and smooth!
